Recipes * Bel’s Alive Pasta Salad

Bel’s Alive Pasta Salad
Blue * serves 4

1 pound of whole-grain fusilli pasta, cooked
1 head of broccoli
1 large carrot, thinly julienned
1 zucchini, julienned
2 red plum tomatoes, seeded, julienned
1 cucumber, seeded, diced
1/2 medium red onion, quartered and thinly sliced
1/4 cup low-fat, non-dairy all natural dressing of your choice

Cook pasta until al dente and set aside. Thinly slice the whole head of broccoli so that you have broccoli pieces. In a large bowl, toss all ingredients together and add dressing.
