Featured recipe from Marilu’s table * Whole grain vegan waffles
Just in time for Valentine’s day – which is a Sunday this year, so it’s the perfect day for a special breakfast for your special someone…
These whole grain vegan waffles are definitely special. You’ll need a waffle iron. If you’ve never used a waffle iron before, be sure to read the instructions that come with it (and maybe make some practice waffles earlier in the week – you can always freeze them for a quick toaster breakfast later).
The waffles freeze well. The batter can be used for pancakes (may need to be thinned a little as the batter stands).
Serve with pure maple syrup or fresh fruit and vanilla soy yogurt.

Mary’s Whole Grain Waffles
Blue * Serves 4 (2 squares each)
1 cup whole wheat flour (or use amaranth flour if you’re allergic to wheat)
1/2 cup whole spelt flour
1/4 cup whole grain cornmeal
1-1/2 Tablespoons Sucanat®
1 Tablespoon non-aluminum baking powder
1/4 teaspoon salt
pinch of cinnamon
1-1/2 cups rice milk or soy milk (or use half of each)
3 Tablespoons unrefined oil, such as safflower
1/2 teaspoon pure vanilla extract
Preheat and prepare the waffle iron as directed by the manufacturer.
Combine liquids and dry ingredients separately, then mix liquid ingredients into dry and blend well with a whisk.
Pour the batter onto the HOT, nonstick-surface griddle. (Thin batter with a little water if needed – it thickens upon standing).
Follow directions for your waffle maker. Do NOT open the lid until it is ready or else the waffle will stick and/or fall apart….be patient!
NOTE: Make sure your waffle iron is well seasoned. The first waffle may come out a little broken or stick to the iron….but the rest will come out perfectly. Sometimes it helps to make the first waffle on the highest setting (”high” or “dark”) and then you can reduce the setting to the medium setting. DO NOT TRY TO TAKE THE WAFFLE OUT UNTIL THE MACHINE TELLS YOU IT’S READY! Many models have a light that goes off when it’s ready – read the manufacturer’s instructions for your waffle iron.
