egg replacer lesson
If you want to try vegan (no animal product) baking, here are some replacements for eggs. Each
replacement is for ONE EGG. Note that some of these replacements make
better binders, and some help with rising. Use an appropriate substitution.
1 teaspoon baking powder + 1 Tablespoon liquid + 1 Tablespoon vinegar = 1 egg
1 teaspoon yeast dissolved in 1/4 cup warm water = 1 egg
1-1/2 Tablespoons water + 1-1/2 Tablespoons oil + 1 teaspoon baking powder = 1 egg
1 packet plain gelatin* + 2 Tablespoon warm water = 1 egg. Do not mix until ready to use.
*note that gelatin is not vegan
Make a flax slurry (this makes enough for three eggs). Grind 1/4 cup flax
seeds in a small container of a blender until completely pulverized - this will
take a couple of minutes. (You may be able to purchase pre-ground flaxmeal at
the health food store). Then blend the resulting flax meal with 3/4 cup water
to attain a slurry with the frothy consistency of whipped eggs, for about 1 minute.
Makes 3/4 cup. Add 1/4 cup of the mixture to the wet ingredients in place of each
egg called for in the recipe. Refrigerate the slurry and use within a few days.
Keep flax meal (freshly ground or packaged) in the fridge to preserve freshness.

Tofu Scrambler - In a saute pan, lightly sprayed with olive oil,
saute 1 small onion, diced. When the onion is soft, crumble in
1/2 package of firm or extra firm tofu, and stir well. Add 1/2 cup
of your favorite salsa, and stir. Serves 1.
Eggless Salad - Thoroughly drain 1 pound of extra-firm tofu, and
mash with potato masher or fork. Add 1/3 cup Nayonnaise or Veganaise, 1-1/2
Tablespoons prepared organic mustard, 1 teaspoon cumin, 1 teaspoon
garlic powder, 1 teaspoon onion powder, salt and pepper to taste, 1 medium
carrot, shredded, and 1 or 2 chopped scallions (optional). Refrigerate for
at least 1 hour to allow flavors to mix. Serve on whole grain bread, or
fill a hollowed tomato half.
